🎨 Color
Exterior: When immature, the skin is a deep green. As it ripens to perfection, it transforms into a bright, pale yellow or yellowish-green, sometimes sporting a light pinkish blush.

Interior: Slicing it open reveals a stunning, vibrant salmon-pink to deep rosy-red flesh. This distinct color comes from lycopene, the same natural antioxidant found in tomatoes and watermelon.

🍃 Texture
Flesh: The flesh is remarkably soft, smooth, and pulpy when fully ripe—much less gritty than standard white guava varieties. It has a creamy, almost velvety mouthfeel.

Seeds: It contains a central core of small, hard, edible seeds. While some people eat them right along with the pulp, others prefer to scoop them out or strain them when making purees.

Skin: The outer rind is thin, crisp, and entirely edible, offering a nice structural contrast to the soft interior.

Flavor: This is where the Calvillo region shines. Thanks to the mineral-rich local soil (known as tepetate), these guavas boast an incredibly high sugar content. The taste is intensely sweet with a bright, tropical, and slightly tangy finish. Many describe the flavor as a complex cross between a ripe pear, a strawberry, and a touch of passionfruit.
