The Mahachanok (a hybrid of the Thai Sunset and Nang Klang Wan mangoes) is widely considered one of the most beautiful and flavorful mangoes in the world. It is often called the "Rainbow Mango" because of its spectacular color transition.

1. Physical Characteristics
Shape: It has a distinctively long, slender, and curved "S" shape. It is much more elongated than a typical Kensington Pride or Alphonso.

Color: This is its most famous trait. As it ripens, the skin turns a glowing golden-yellow with a vibrant pink-to-purple blush covering the "shoulders" or the side exposed to the sun. At peak ripeness, it looks like a tropical sunset.

Skin: The skin is thin, smooth, and has a delicate waxy bloom.

Flesh: The interior is a deep salmon-orange. It is virtually fiberless, with a smooth, buttery consistency that melts in the mouth.

Seed: It has a very thin, flat stone (pit), meaning you get a high ratio of flesh to seed.

2. Flavor & Aroma
Taste: The flavor is an intense explosion of sweetness with a sophisticated honey-like finish. It is often described as having a syrupy, nectar-like quality with subtle hints of peach and apricot.

Aroma: It is one of the most fragrant mangoes; a single ripe fruit can fill a room with a heavy, floral, and fruity perfume.

Brix Level: It is exceptionally high in sugar, often reaching 18–20° Brix when fully tree-ripened.

3. Cultivation: The "Chiang Mai" Connection
In Chiang Mai and Northern Thailand, this variety thrives due to the slightly cooler nights during the ripening season:

Enhanced Color: The temperature fluctuation in Northern Thailand helps intensify the anthocyanins in the skin, resulting in the deep purple and red blushes that the "Chiang Mai Mahachanok" is famous for.

Late Season: Chiang Mai harvests often come slightly later than Central Thailand, often extending the mango season into June or July.
